George’s at the Cove Delivers the San Diego Lifestyle with Spectacular Food, Wine, Service and Ambiance

George’s at the Cove, located in downtown La Jolla, is one of the best restaurants in San Diego.  We don’t eat there as often as some of the other restaurants we frequent in North County or Downtown, but when we do, we always have a wonderful experience at “George’s.”  They have won numerous awards, and provide breathtaking views of La Jolla Cove and the Pacific Ocean.  The Zagat Review rates George’s a 4.5 for food, decor, and service.  They have a wonderful wine list, and a great selection of craft cocktails as well. George’s is really three restaurants in one:  California Modern, Level 2, and Ocean Terrace.  George’s recently completely renovated Level2 and changed it into a bright, captivating craft cocktail bar. They strive to prepare both creative and classic cocktails with care.  California Modern is the signature fine dining restaurant, and Ocean Terrace, on the top level, provides a more casual dining experience.

We were able to get Executive Chef & Partner, Trey Foshee, to take some time out of his exceptionally busy schedule and answer a few questions for us about George’s:

San Diego Lifestyle:  Tell us how how long you’ve been in business?

Trey Foshee:  The restaurant was started 32 years ago by George Hauer who had a corporate restaurant background prior to opening George’s at the Cove.

SDL:  You’ve received so many awards.  Tell us about the ones you’re most proud of.

Foshee:  They all start to blur together after this long, but the Food and Wine Top Ten New Chefs is one we are very proud of. Of course, to be around for as long as we have and still even be in the running for any awards is an honor and testament to the talent we have working for us.

SDL:  It definitely is! George’s is actually three restaurants in one.  How would you describe each level?

Foshee:  Ocean Terrace is a casual California restaurant over looking the La Jolla Cove. Level2 is our craft cocktail bar and restaurant, and on lowest level, California Modern is our signature restaurant with the goal of serving San Diego on a plate. Meaning, local product done in a modern yet southern California style.

SDL:  We love the Ocean Terrace! What are some of the most special moments you’ve hosted at Georges?

Foshee:  We’ve hosted so many special events, it’s hard to even begin to explain them all. We hosted the Rookie of the Year party when the super bowl was in San Diego last, so that was quite memorable and exciting for us. We often host celebrities, but we keep their privacy.

SDL:  We noticed that you have three private rooms on the California Modern level.  How does one book these for a private event?

SDL:  How many other chefs do you have working with you on the incredible dishes you create for the three separate restaurants?

Foshee:  I am the executive chef and then I have two CDCs (chef de cuisine) working under me, a pastry chef and 3 sous chefs. I have been a partner in the restaurant for 17 years.

SDL:  How often does your menu change?

Foshee:  California Modern changes constantly, while the other floors change seasonally.

SDL:  Wow that’s exciting! I saw in a recent review that you have a tasting menu.  Tell us more about that.

Foshee:  California Modern offers a nightly chefs tasting menu of 8 courses. We also offer TBL3 which is an extended tasting menu of 14 courses that is available to book in advance and only one table per night. SDL:  Tell me something most people don’t know about George’s at the Cove.

Foshee:  Many of our staff have gone off to do great things in the industry after working here. We are a very good builder of talent and we support growth.

George’s has a terrific video of executive chef Trey Foshee, where he gives some additional insight into the menu at California Modern.  They like to focus their dishes on one or two ingredients that are at their peak.  According to Foshee:  When George’s creates a new dish for the menu, we challenge ourselves on four key values: (1) Story of the dish, background or inspiration. Is the message clear?; (2) Does it give you a sense of place? Does it taste like the san diego lifestyle?; (3) Sense of time, is it seasonal?, and (4) Is the dish balanced in texture and flavor?

San Diego Restaurant Week is September 25 through October 2 and this year, George’s is celebrating everything local at George’s California Modern, their signature fine dining experience.  They will be offering a special prix-fixe menu featuring an outstanding variety of appetizers, entrees and desserts at special Restaurant Week pricing.
